Menu Plan Monday

It's a Chicken Week around here! Perdue is on sale at Shaw's for $1.88/lb. Woohoo, I'm stocking up, especially since I had a $27 surplus in my grocery budget from last week (out of a $40 weekly budget!).

Menu Plan is Fri-Thurs since that's how the ads run.

Friday: Digiorno Pizzas (from the Target sale - buy 1 at $3.99 and get a free 2-liter of Coke)

Saturday: Chicken Stuffed with Rice, corn (I will post this recipe if anyone is interested. It's very good, frugal, and easy!)

Sunday: Chicken Fajitas

Monday: Cheapo meal out, or something easy from the pantry

Tuesday: BBQ Crockpot Chicken, Potatoes, Corn

Wednesday: Oven Baked Chicken Fingers, scalloped potatoes, frozen veggie

Thursday: Out to eat

Breakfasts for me will be:
oatmeal with bananas and peanut butter
smoothies from homemade yogurt and frozen strawberries bought in bulk on discount

Breakfasts for DD will be:
fruit and cereal
yogurt with toast

Lunches for me will be:
soup with bread and butter
smoothies from homemade yogurt and frozen strawberries bought in bulk on discount
grilled ham and cheese quesadilla

There really aren't very many great sales at the grocery stores around here this week, so I'll be sticking to quick and easy recipes (quick and easy also means cheap!) that are still somewhat healthy.


Sunday: Baked Cornflake Chicken Tenders with peapods and scalloped potatoes

Monday: Chicken and rice casserole with a side of broccoli

Tuesday: Ham and Cheese Quesadillas with a side of fruit salad

Wednesday: Meat Loaf, mashed potatoes, corn

Thursday: Dinner Out

Friday: Leftover meatloaf

Simple, but still comforting meals in this cold weather!

It feels good to be back to a normal week. Don't get me wrong, I definitely enjoyed a short work week last week, but I feel a bit out of sorts.

There are some great deals at Shaws this week, including their great Meat Sale. Today's the last day, so if you have some extra $$, it's a great time to stock up. Here's my grocery trip for this week:


I was able to get all of the above for just $25.xx after my Shaws card savings and coupons. The original price was over $80. DH went with me and was amazed at how much I saved.

Here's what I plan to make this week for dinners (I plan Fri-Thurs):

Friday: Thanksgiving leftovers
Saturday: quick from the cupboard (I think we had some chef boy ardee and soup)
Sunday: Sausage with Peppers and Onions on homemade sub rolls
Monday: quick meal out while doing errands
Tuesday: Crockpot Chicken Cacciatore over pasta
Wednesday: Marinated Chicken Breast, frozen veggie and scalloped potatoes
Thursday: Date Night Dinner

For my Breakfasts:
Homemade Yogurt with frozen blackberries, homemade strawberry jam and honey
Frosted Mini-Wheats
Yogurt Smoothies

For my lunches:
Lean Cuisine
Soup
Leftovers

This is my first Menu Plan Monday in a long time. I think I've only officially blogged about it one time before, but I will try to make this a regular occurrence. By the way, you can view all of the other great menus for the week here.

Here's our menu for the week (I base my week on Friday through Thursday). Lots of items were from our pantry, and my grocery budget for the week so far is $26:

Friday: Sloppy Joe's with Peapods
Saturday: Homemade Pizza
Sunday: Chicken marinated in Italian spices and pan-sauteed, corn, mashed potatoes and homemade rolls
Monday: Out to eat (blech!)
Tuesday: London broil, baked potato, frozen veggie
Wednesday: Chicken mixed with a noodle hamburger helper mix
Thursday: Out to eat (yeah!)
